Peter Arnone comes to Cellar 335 with a great deal of experience in opening a number of high profile restaurants. From working with David Burke, Marcus Samuelsson and fashion designer Ralph Lauren, Peter brings a lot to the table.
Born and raised in New Jersey, Peter got an overall feel for the industry at a very young age, working in family-owned restaurants in his home state. Peter landed his first management position with The Ho-Ho-Kus Inn, which was also his first restaurant opening. He worked closely with the owners and the Marcus Samuelsson Group. After several years at the Ho-Ho-Kus Inn, Peter met Chef David Burke who led him to his next project: the David Burke Kitchen at the James Hotel in Manhattan. Peter became the Assistant General Manager at Kitchen in charge of the restaurant, catering business, room service and rooftop club, Jimmy. He also helped develop company-wide systems that are still being used by the group.
Peter was also the General Manager of the NYC restaurant TOY, which he opened with owners Daniel and Derek Koch (also seen on the TV show “Playing with fire”). As the General Manager, Peter ran TOY and the rooftop lounge Plunge along with room service. After playing an active role in the sale of TOY, Peter was hired by Citarella as the General Manager of its Upper East Side restaurant Fulton, where he worked closely with the chef on menu development.
Just prior to joining Cellar 335, Peter was working with Chef Sepp Stoner on the opening of Ralph Lauren’s clubby, celebrity filled Manhattan restaurant, The Polo Bar. Known for as one of the most coveted and desirable restaurants in New York City, The Polo Bar is also one of the hardest to get into. As its opening General Manager, Peter set into place all operating practices and procedures, while working closely with Ralph Lauren executives and managing a staff of over 200.
