Joshua Fossitt learned the cocktail business from the best in the business, and now brings his 15 years of knowledge to Cellar 335. After working in virtually every front of the house position in bars, restaurants and catering services, Joshua left Ohio for New York City where he spent nearly six years working with some of the most respected bartenders, chefs, and restaurant groups in the world, including Leo Roebetschek, the Bar Director for Made Nice (owners of The NoMad and Eleven Madison Park); Jack McGarry, Owner of The Dead Rabbit in New York City (and The Merchant Hotel Bar in Belfast); and Michael and Danny Neff of Holiday Cocktail Lounge, Ward III, and Rum House.
Joshua has also served as Assistant General Manager for BLT Burger and created national cocktail lists for ESquared Hospitality (formerly BLT Restaurant Group). He also worked as the Service and Bar Manager at The Harrison, Jimmy Bradley’s former TriBeCa staple. Prior to moving to Chicago in the summer of 2015, Joshua was an integral part of the core bartender team at The NoMad.
In addition to creating the cocktail list for Cellar 335, Joshua currently tends bar for The Heisler Group at Sportsman’s Club and Queen Mary Tavern, two of Chicago’s top-rated bar programs, and will be managing the cocktail and bar program for their newest venture, Bad Hunter, scheduled to open summer, 2016.
